Latest Menu Plans will be at the top of this page and links to recipes provided where I have them available, sometimes after the fact.  
I make certain items every week for lunches or snacks: soup, bread, scones, treats and will try to vary these most weeks.
I hope some people find this useful and where we have a YouTube video on this, I will link it too :)

What do we have an abundance of/veg box/needs using?  

Butternut squash, potatoes, rhubarb, asparagus, salad leaves, kale, swiss chard, beetroot, whipped cream
Veg box:  Onions, carrots, tomatoes, cauliflower, bananas, apples, plums, turnip.
To use up:  Tomatoes, broccoli, satsumas

Monday - Sausage pasta with tomatoes & swiss chard/kale sauce, asparagus side
Tuesday – Paprika pork with asparagus/kale & rice
Wednesday – Diced beef one pot
ThursdayMinced beef and sweet potato stew with PSB and asparagus
Friday -  Nana's corned beef pinaculty
Saturday - Freezer filling pie (whatever needs using as a filling)
Sunday –   Duck in hoisin sauce with salad & wraps

What do we have an abundance of/veg box/needs using?  



Butternut squash, carrots, potatoes, rhubarb, asparagus, salad leaves, kale, swiss chard & last of veg box fruit
Veg box:  Onions, peppers & salad items, bananas, apples, plums, turnip, carrots, parsnip, cabbage.
To use up:  

Bank Holiday Monday - Quick and easy sausage pasta
Tuesday – Cottage Pie with veg & extra gravy
Wednesday – Lamb curry with long grain rice, homemade naan & mint yoghurt
Thursday – BBQ shredded chicken (thighs), grilled asparagus, salad, rice & homemade buns
Friday -  Homemade pizza
Saturday - Lasagne, salad & homemade garlic bread
Sunday –   to be decided!

Soups of the week (extra made this week to freeze as we're out of soup)

Potatoes, rhubarb, asparagus, salad leaves, radish (nettles, dandelions), bacon & Chorizo
Veg box:  Butternut squash, salad items, turnip, carrots, parsnip, apples, pears, leek, cabbage.

Monday - Freezer meal - cottage pie with vegetables.
Tuesday - Slow cooker one pot beef stew - diced beef & gravy with veg box vegetables
Wednesday - Roast chicken with salad & pitta bread
Thursday - Spaghetti Bolognese 
Friday(LO) Chicken Curry
Saturday - (LO) Chicken and vegetable pie with mash and asparagus
Sunday - Not sure yet

There are only the 2 of us - we have a paddock and have considered growing our own veg but as we have a business (engineering) we haven't got regular hours so we support a local organic vegetable scheme - once a week (Friday) we get a carrier of lovely vegetables. On a Saturday (today) we have our "night in" and it's always a roast with the lovely vegetables. The roast lasts 2 meal times - sometimes 3. I do a shepherds pie and we have this with the vegetables so they last us the week. Any left over veg goes into a soup. We have hens so get our own eggs - if we have a glut I grate some cheese, add 2 eggs , worcester sauce and mustard and spread over the potato and any root veg topping - awesome.

    1. Thank you for this. Great ideas which I will be remembering! We're still finding our feet and it will be a long time yet before we're harvesting our own veg. However in the mean time we're getting eggs from the new chucks and I've made my own bread. I need to see where the local farm shops are, if any?
